Polynesian Curry Chicken

HOMEMADE RECIPE BY FATIMA FROM ECUADOR VIA DZIKÓWKA





INGREDIENTS

  • 1 onion
  • 2 lbs. of chicken breast
  • 2 tbsp. of butter
  • 4 scallions
  • 2 tbsp. curry powder
  • 1 can of coconut milk (13.5 fl.oz., 398 mL)
  • 2 cups of chicken broth (1 Maggi cube)
  • 1 tbsp. of fresh, chopped ginger
  • 1 tbsp. of chopped mint leaves
  • 1 cup of white cooking wine
  • 1/4 cup of lemon juice
  • 1/2 cup of heavy cream
  • 1 box of raisins
  • 1 pack of shredded (or sliced) almonds
  • 1 pack of dried, shredded coconuts
  • 1 jar of sweet & hot mango chutney

PREPARATION

Fry onion in olive oil, add chicken cubes and cooking wine. Let it cook, till wine evaporates! In another pot melt butter and fry cut scallion with curry powder, 1 cup of chicken broth and coconut milk. Simmer for 20 minutes on a low heat! Add chopped ginger, mint and 1 cup of chicken broth and lemon juice! Simmer for 20 minutes on a low heat, mix frequently! Transfer everything to chicken, add half a cup of heavy cream and 1 box of raisins! Mix well!

Serve almonds, coconut and mango chutney at table and add according taste!
